custard cloud latte recipe

i did it. i jumped on the egg yolk coffee train (& put my own spin on it) & i wished i had sooooner!

this custard cloud latte recipe of mine is so creamy, delicious, & nourishing. egg yolk coffee has been around for a longggg time & popularized in both Vietnam & Russia. Noelle Kovary’s posts & highlights have a ton of information on the benefits of yolky coffee.

before you look the other way in disgust….trust me on this one. you can’t taste the egg at allll in this drink, but it makes the coffee so smooth, plus it adds healthy fats & protein along with the collagen & whole milk. choose high-quality milk & eggs for the most nutritive value (& the best taste)! i personally get our eggs from the farmer’s market & our raw milk from a local farm.

RECIPE:

  • add 1 egg yolk + 1 tbsp cane sugar to a coffee cup & whisk until creamed together (about 20 seconds). it will turn a rich, light yellow color! you can use a small whisk or a handheld frother that has a whisk attachment, like this one!

  • pull 2 shots of espresso over the egg/sugar mixture

  • add a bloop of vanilla bean paste, powder, or extract & swirl cup to combine

  • steam milk (i like using whole raw milk!) until warm & foamy

  • slowly whisk a scoop of unflavored collagen into the milk. slowly is key because this helps it dissolve well with no clumps!

  • pour milk over the espresso shots & enjoy!
