everyday homemade salad dressing

coming to you today with a recipe for the best homemade salad dressing! i usually have a few options of salad ingredients on hand for a quick side to any meal, & this dressing is the perfect addition to pull all the flavors together. versatile & oh-so-simple - i think you’ll love it as much as i do!

INGREDIENTS:

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • 2 tablespoons lemon juice

  • 2 teaspoons honey

  • 2 teaspoons dried italian seasoning

  • 1 garlic clove, grated or minced

  • 1 teaspoon dijon mustard

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • optional: add parmesan!

just pour all your ingredients into a bowl or jar, whisk it up, & you’re good to go! i love using a lidded jar - pop the top on & shake it up instead of whisking, & it’s already in the perf storage container for the fridge.

this amount is enough for 1 big family salad or a few small salads. i typically triple it & store it in the fridge so i can have it on hand for the week.

here’s a video tutorial as well!

as per my usual, the measurements are approximate :) this recipe can def be adjusted for whatever you have on hand! here’s an idea of some salad ingredients you can usually find in my fridge at any given time:

- greens // romaine, spinach, kale, spring mix

- leftover grains // cooked rice or quinoa from the day before

- veggies // just depends on what i grabbed from the farmers market that week. bell pepper, cucumber, carrots, red onions, & snap peas are some of my faves to add to salad right now!

- toppings // nuts & seeds, tortilla strips, croutons, feta cheese & so on. i don’t think you can ever have too many salad toppings! costco has an amazing “salad topper” blend that i always buy & my favorite feta is Trader Joe’s mediterranean feta.

enjoy!
