my classic chicken salad recipe

here’s the deal: i love cooking dinner for my family…but breakfast & lunch are my LEAST fave meals to make. lunch specifically. it just always feels like an inconvenience. insert: leftovers for lunch OR simple, classic recipes that take 10 minutes to make, last all week, & can take different forms to keep me from getting bored!

my chicken salad recipe is basically on a weekly rotation because of this!

my favorite ways to eat it:

  1. on toasted sourdough or a brioche bun with arugula tossed in my everyday salad dressing

  2. on good old plain pretzel crispssss. ultimate lunch easy button

ingredients:

one rotisserie chicken, shredded

3/4 cup mayo

1/4 cup chopped pecans

handful of quartered green (or purple) grapes

2 celery stalks, chopped

1 teaspoon dijon mustard

salt & pepper to taste

Directions:

this is seriously the easiest recipe! once your rotisserie chicken is shredded (i find it easiest to shred when it’s still warm, but not crazy hot!), just combine all ingredients in a big bowl & refrigerate until you’re ready to eat!

this will stay good in the fridge for probably a week or so (though it never lasts that long in my house!), so it’s perfect to eat as snacks or lunch throughout the week.

i love scooping it up with crackers or pretzel crisps, eating it on top of lettuce, or as a chicken salad sandwich with a brioche bun, arugula, & my homemade salad dressing!
